Helpful hints

  • Be sure to use Arborio rice when making risotto; do not substitute with a different kind of rice. The dish is meant to be creamy and this particular variety of rice releases starch as it cooks which gives it a creamy texture.
  • Look for low sodium broth. This recipe used a broth with 140mg of sodium per 1 cup.
  • Reduce portion to 1/2 cup for a lower carbohydrate diet.

I'm so disappointed that there are not photos to accompany the wonderful recipes here. I haven't made the recipe yet, but based on ingredients, I'd give it 3 stars to start with.

Phos. is 175 for one serving. What is the daily recommended phos. level (3 meals and 1 snack daily)? Dietitian comment: In general a low phosphorus diet is 1000 mg or less per day.If you want to reduce phosphorus you can reduce or omit the Parmesan cheese or you can cut the portion to 1/2 cup as 1 cup is pretty generous.
