I varied it a little since I'm just cooking for myself, and I thought it was pretty good. I used 1 T. Of cream cheese, 1 T. Of parmesan cheese, 2 T. Coffee mate non dairy creamer, 1/4 cup sauteed orange and yellow peppers, and 1 scallion sauteed in 2 teaspoons olive oil, a dash of pepper and Mrs. Dash on top of 1 cup noodles. I skipped the garlic powder since I used the scallion. It was yummy! Did I over do it on the creamer and cheeses? Dietitian comment: you may want to use half & half or nondairy creamer that does not have phosphate additives. Otherwise your changes sound reasonable. You can use the My Creations feature in DaVita Diet helper to enter your ingredients and see the nutrient profile.

This is a great recipe & my friends liked it very much. I used the peppers instead of the carrots and instead of pureeing them, I just diced and sauteed them. My only disappointment was that it is too dry. How can I make it saucier without raising the potassium too much? Dietitian comment: Save some of the starchy water from the pasta and add to the mixture in step #4 before baking it. Let us know how it works!

Yummy! Tried to add to my planner tracker, could not get it to come! Dietitian comment: Some of the newer recipes from are not available in Diet helper until they are exported. After the next export you will see this recipe in Diet Helper. In the mean time you could add it to My Creations if you want to use it in planning and tracking now.

Can you use whipped cream cheese in this recipe? Also could you use baby food carrots? Yes you can use both.
